What is Choux Pastry?

Choux pastry is not really a pastry in the true sense of the word it is more like a thick batter produced by adding eggs to a cooked roux which is produced from water, fat and flour. It is used to produce such items as; éclairs, choux buns, profiteroles, choux swans, and some fried varieties.
