Hand Dipping of Chocolate Truffles

 
  • Another way to finish the chocolate truffles is to dip each one of the truffle into the tempered coverture and then take it out  with a dipping fork. Excess chocolate is removed by lightly tapping the fork on the rim of the bowl for the surplus of chocolate to be removed.
  • Place onto a fine wire to obtain the markings and then set off onto waxed paper or acetate film.
  • Aim not to have any surplus  chocolate on each dipped chocolate. In this way a more attractive shape is obtained and waste is avoided.
